I answered the question from a regulatory standpoint to save the trouble of
getting a 483. As a microbiologist, I am well aware that it would not have
any impact what so ever. So, I guess it comes down to this: It would be
easier to justify over incubation, than refrigeration followed by
continuance of incubation. But leaving the justification part out, it is
simply not a good practice to refrigerate in the middle of the incubation
period.
